Would a hydrofoil help me?

I have a 17 foot 1976 Viking Deckboat with a 115 hp Mercury "Tower of Power". I put a fishing deck on the front, which is an open bow, so nobody can ride in the front when we move. When I hit top speed (about 32 mph) the front is up so high you have to stand to see the water in front of you. Would a hydrofoil help keep the front down (it does have trim)? Also would a hydrofoil get the top speed higher?
it's a tri-hull

To answer your last question first, a hydrofoil added to your outboard will reduce your top speed slightly, more drag. Hydrofoils work well in some applications to give added stability, but with a hull shape such as yours, it will do nothing to improve performance or ride.
Sounds to me like the outboard is mounted too high on the transom. Your boat has a shallow V bottom, so your outboards' anti ventilation plate should be even with, or slightly below the lowest part of the transom when the outboard is trimmed to align with the bottom. Check this alignment, and move the outboard up or down by changing mounting holes on the transom bracket.
