What kind of boat would I want?
I know absolutely nothing about boats or sailing. Therefore, the kind of thing I am requesting might not even exist. However, I was wondering if there is a specific type of boat that could be used for long distance sailing and living on for multiple weeks or even months if need be. Like I said, I know nothing about boats but it has been a dream of mine to learn about and hopefully one day own a boat that can both sail across the world safely plus be safe enough to live in. If you could answer this possibly even with links to websites and such about this kind of thing, that would be great.
I live in the Caribbean on my boat and have done so for the last 30 odd years.........there are thousands....maybe tens of thousands...... of people "living aboard" all over the world......some at marinas where the boat hardly ever moves, some in harbors along the way as they spend 3 or 4 or 5 years traveling from place to place......
you have a lot to learn but there are a lot of people out there willing to share what they know start with any good nautical bookstore / marine supplier with a good book section.......Landfall Navigation, Pilothouse Books, Armchair Sailor.......and look for "cruising" stories

as for a good boat........ask 100 sailors and you'll get 120 answers.......but start with the idea of a fiberglass hulled 30-35 foot sloop rigged sailboat........
